Ingredients
- 4 sweet potatoes -boiled and chopped
- 1 onion -chopped
- 1 green pepper -the yellow or red one, chopped
- 10 cherry tomatoes -small
- 1 tbsp olive oil -extra virgin olive oil
- 1 tbsp parsley leaves -chopped, fresh or dried
- 1 pinch of salt
Instructions
- First, boil the sweet potatoes for 25 minutes, then peel and chop them.
- After that, chop the yellow or red-green pepper.
- Then cut the onion into slices.
- Cut the tomatoes into two halves.
- Finally, put all the ingredients into a bowl.
- Drizzle olive oil.
- Add a pinch of salt and toss to combine.
- At last, sprinkle with parsley.
