This recipe is made with fresh ingredients such as sweet potatoes, onions, green peppers, cherry tomatoes, and parsley. It is very easy to prepare.

Ingredients
  

  • 4 sweet potatoes boiled and chopped
  • 1 onion chopped
  • 1 green pepper the yellow or red one, chopped
  • 10 cherry tomatoes small
  • 1 tbsp parsley leaves chopped, fresh, or dried
  • 1 pinch of salt

Instructions
 

  • First, boil the sweet potatoes for 25 minutes, then peel and chop them.
  • After that, chop the yellow or red-green peppers.
  • Then cut the onion into slices.
  • Cut the tomatoes into two halves.
  • Finally, put all the ingredients into a bowl.
  • Drizzle olive oil.
  • Add a pinch of salt and toss to combine.
  • At last, sprinkle with parsley.

Notes

You can also add chopped boiled eggs or green olives. Moreover, you may sprinkle this delicious vegetable salad with Parmesan cheese. Good appetite!
